Recipe of the Month: Spring Spinach Salads

Spinach. Most of us associate the leafy vegetable as the source of Popeye’s strength. When faced with the sight of trouble, the pipe-smoking sailor-man Popeye would burst open a tin of spinach. One consumed, his biceps would bulge and his new found strength would see him overcome his enemies.

Even though this legendary statue of Popeye is slightly inflated, there is lots of nutritional qualities that the leaves possess. In addition to restoring energy, increasing vitality and improving the quality of blood, spinach is also known to help improve bone health and maintain a healthy eye-sight.

Besides being good for you, the veggie is also a great compliment to practically any dish.

To celebrate the beginning of spinach’s peak season, and the anticipation of spring, we gathered up our favorite spinach salad recipes that are not only ultra-healthy, but are also scrumptious and refreshing.


Strawberry Avocado Spinach Salad with Chicken

What better way to ring in the spring season than by creating this colorful and scrumptious salad? The ying and yang of sweet strawberries with red onion and avocado is one of our favorite combos ever and you can always swap out the strawberries for raspberries or blueberries and instead of feta, give goat cheese a try.


Blueberry Broccoli Spinach Salad with Poppy Seed Ranch

Speaking of blueberries, the tiny sweets are taking center stage in Peas & Crayons’ salad recipe that provides the perfect blend of savory sweetness. To keep things simple, you can use your favorite store bought dressing, or for a more unique approach, whisk together homemade poppy seed ranch dressing.


Quinoa Spinach Power Salad with Lemon Vinaigrette

Known to be a power food, quinoa is a tiny grain that is extremely nutrient dense. When paired with the super food of spinach, these two ingredients pretty much make for a complete meal. A great way to utilize these two is by whipping up this delicious salad that allows for the addition of basically any ingredients. Just remember that if you’re adding lots of ingredients, you may need to increase the quantities of the lemon juice and olive oil in your vinaigrette.

If you’re thinking of cutting carbs from your diet, this low carb salad may be just what you need. High in both protein and flavor, it’s perfect for lunch or dinner. It doesn’t require a dressing because as you mush the avocado with your fork, the egg yolk and avocado combine and coat the spinach leaves to come together as the perfect dressing for this salad. The best part is that with all the healthy fats, it will leave you feeling satisfied.


Beet Salad with Carrot, Quinoa and Spinach

This colorful salad recipe by Cookie + kate is as flavorful and nutritious as its bold colors would suggest. Use quinoa, edamame, almonds or pepitas, beets, carrots, spinach or arugula and avocado for its base ingredients and top off with delicious vinaigrette. Yum!
